The problems with industrial seed oils

Industrial seed oils have become a ubiquitous part of the modern diet, but their widespread use is a major contributing factor to chronic inflammation in the body. These oils, which include soybean, corn, canola, sunflower, and safflower oils, are high in omega-6 fatty acids, particularly linoleic acid. When consumed in excess, omega-6 fatty acids can lead to an imbalance in the body's omega-6 to omega-3 ratio, promoting a pro-inflammatory state. 

The inflammatory process begins when these oils are metabolized in the body. Linoleic acid is converted into arachidonic acid, which serves as a precursor for inflammatory molecules called eicosanoids. These eicosanoids include prostaglandins and leukotrienes, which play a key role in the body's inflammatory response. As the consumption of industrial seed oils increases, so does the production of these pro-inflammatory compounds. 

Furthermore, industrial seed oils are highly susceptible to oxidation due to their polyunsaturated nature. When exposed to heat, light, and air during the industrial extraction process and cooking, these oils form harmful compounds such as aldehydes and lipid peroxides. These oxidized lipids can trigger inflammation and oxidative stress in the body, potentially damaging cells and tissues over time. 

The inflammatory effects of industrial seed oils extend beyond their fatty acid composition and oxidative potential. These oils are often found in ultra-processed foods, which themselves are associated with increased inflammation. Additionally, the industrial processing methods used to extract and refine these oils may introduce chemicals and solvents that can further contribute to the body's inflammatory burden. By promoting chronic and systemic low-grade inflammation, the regular consumption of industrial seed oils play an important role in the development of various chronic diseases, including cardiovascular disease, diabetes, and certain cancers, just to name a few. It is best to avoid the consumption of these oils altogether.
