FROM FARM TO TABLE: A JOURNEY THROUGH TRADITIONAL FOOD CULTURES; FIRST STOP THE UK…
Food has always been a powerful lens through which to understand culture, and it was this fascination that inspired me to embark on a journey across the UK, Germany, and Vietnam to research traditional food practices. I wanted to explore how different regions honor their culinary heritage, from the way they grow and prepare their food to the cultural significance behind their meals. This journey was not just about tasting dishes but understanding the stories, techniques, and traditions that make each cuisine unique. My goal was to immerse myself in these cultures, learning firsthand how food connects people to their history and environment.
My journey began on Dr. Natasha Campbell-McBride's regenerative and sustainable farm in the southwestern UK. Nestled in the countryside, her farm is a model of biodynamic practices that prioritize harmony between humans, animals, and the land. Over several weeks, I learned how to care for animals—milking goats and cows, tending to chickens, geese, ducks, and turkeys—and cultivated organic vegetables. Dr. Natasha’s “Nourishing Traditions” approach to food preparation deepened my understanding of ancestral techniques like fermenting vegetables, making bone broths, and preparing raw dairy products. These methods emphasized nutrient density and gut health, offering a profound connection between traditional diets and well-being.
My time on Dr. Natasha Campbell-McBride’s farm was not only a hands-on experience in sustainable farming but also a pivotal moment in my professional journey as a Certified GAPS Practitioner. Dr. Natasha, who is both my mentor and the founder of the GAPS Nutritional Protocol, provided invaluable guidance during my stay. Working alongside her deepened my understanding of the principles behind the GAPS diet and how they can be applied to support gut health and overall well-being. From milking goats and cows to fermenting vegetables and preparing nutrient-dense meals, every task on the farm reinforced the importance of traditional food preparation techniques. This immersive experience allowed me to refine my skills as a practitioner, equipping me to better guide my clients in implementing these life-changing practices into their own lives.
This journey has forever changed how I view food. It’s more than sustenance—it’s a bridge between people, history, and nature. My time on Dr. Natasha’s farm laid the foundation for this understanding, showing me that regenerative farming and traditional food preparation are essential for both personal health and environmental sustainability. As I continue to integrate these lessons into my life, I am inspired to share them with others who seek a deeper connection with their food and its origins.
